BILL CLINTON'S TUNA FISH SANDWICHES
1 teaspoon prepared mustard
1 (6-1/2 oz) can tuna, drained
1 tablespoon mayonnaise
1 egg, hard cooked and chopped
1/2 teaspoon salt
1 teaspoon onion, finely chopped
4 slices whole wheat bread
1 tablespoon celery, finely chopped
1 tomato, sliced
1 teaspoon pickle relish
2 lettuce leaves
1 teaspoon Dijon mustard
In a medium bowl place tuna, egg, onion, celery, pickle relish,
mustards, mayonnaise and salt. With a fork, combine all ingredients
well.
Spread tuna mixture on 2 bread slices, cover with tomato slices
and lettuce and top with remaining bread slices. Makes 2 sandwiches.
BILL CLINTON'S LEMON CHESS PIE
1 Unbaked 9-inch pie shell
2 cups Sugar
1/2 cup Butter or margarine
5 Eggs
1 cup Milk
1 tablespoon Flour
1 tablespoon Cornmeal
1/4 cup Fresh lemon juice
3 lemons, grated rind only
Cream sugar and butter; add eggs and milk. Beat well. Then add
flour, cornmeal, lemon juice and lemon rind. Stir until thoroughly
incorporated. Pour mixture into pie shell; bake at 350 degrees until
done, 35 to 40 minutes.
HILLARY CLINTON'S CHOCOLATE CHIP COOKIES
Preheat the oven to 350 degrees. Brush baking sheets lightly with
vegetable oil or spray with a cooking spray.
Combine on waxed paper:
1-1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
In large bowl with electric mixer, beat together until creamy:
1 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
In large bowl with electric mixer add 2 eggs and beat until
light and fluffy.
Gradually beat in flour mixture. Stir in 2 cups of rolled oats and
then 2 cups of semisweet chocolate chips.
Drop batter by rounded teaspoonfuls onto baking sheets. Bake for
8-10 minutes or till golden brown. Cool cookies on sheets for
2 minutes. Place cookies on wire racks to cool completely. Best
served warm with a glass of milk Makes 7 dozen cookies (you can
cut the ingredients in half).
