Snowball Cookies
2 c. flour
2 c. finely chopped pecans
1/4 c. sugar
1 c. butter, soft
1 tsp. vanilla
Powdered Sugar
Heat oven to 325-degrees. In large mixer bowl, combine all ingredients,
except powdered sugar. Beat at low speed, scraping bowl often, until
well-mixed (3 to 4 minutes).
Shape rounded teaspoonfuls of dough into 1-inch balls. Place 1-inch
apart on cookie sheets. Bake 18 to 25 minutes, until very lightly
browned. Cool 5 minutes. Roll in powdered sugar while warm; then
roll again when cool.
Makes around 3 dozen.
