
RED VELVET CAKE
1/2 c. shortening
1-12 c. sugar
2 eggs
2 oz. bottle red food coloring
2 tsp. baking soda
1 tsp. salt
2-1/2 c. flour
1 tsp. vanilla
1 c. buttermilk
1 tsp.baking soda
1 tsp. vinegar
Cream together sortening, sugar and eggs. In separate bowl,
mix together coloring & cocoa; add to creamed mixture. Add
salt, flour, vanilla and buttermilk. Alternately add soda
and vinegar until just blended.
Pour batter into 2 greased and floured 8-inch round baking
pans. Bake at 350° for 30 minutes. COol. Spread frosting
on layers and stack to form a 2-layer cake.
Frosting:
3 T. flour
1 c. milk
1 c. sugar
1 c. shortening
1 tsp.vanilla
Combine flour and milk in a saucepan; cook over mediumheat until
thick. Cool. Cream together sugar, shortening and vanilla until
fluffy; add to flour mixture. Beat until light and fluffy.
