Hawaiian Sweet Bread Recipe

Hawaiian Sweet Bread is sometimes called Portuguese Bread because of its origins. Serve it in the morning for breakfast, slathered in butter, toasted or straight from the loaf. This soft, sweet bread needs no preserves. Mmm, ono! (Ono means tasty in Hawaiian!)

1/4 c. warm water
1/2 c. mashed potato
2 T. sugar
1 pkg (2-1/2 tsp.) active dry yeast
1/4 c. milk
1/2 tsp. salt
1/4 c. butter
3 large eggs, beaten
3/4 c. sugar
4 to 4-1/2 c. flour

In a large bowl, mix together the warm water, mashed potato, 2 tablespoons sugar, and yeast. Set aside to proof for five minutes.

In a small saucepan, heat milk, salt, and butter over low heat until the butter is completely melted. Cool mixture to lukewarm and whisk in eggs. Add milk-egg mixture to the potatoes and yeast. Stir well. Add 3/4 cup sugar and enough of the 4-1/2 cups flour to make a workable dough. Knead for a few minutes, until dough is smooth and elastic.

Place dough in oiled bowl, turn once and cover loosely with plastic wrap and a light, clean dishtowel. Let it rise for an hour, or until doubled in size. Punch down the dough and shape into desired loaves on a greased baking sheet. Cover and let rise until doubled. Bake at 350 degrees for 30-45 minutes, or until golden brown.

King's Hawaiian Bread

6 c. plain flour
3 eggs
1 c. pineapple juice
1 c. water
3/4 c. sugar
1/2 tsp. ginger
1 tsp. vanilla
2 pkg. yeast
1 stick margarine

Beat eggs; add pineapple juice, water, sugar, ginger, vanilla and melted margarine. Put 3 cups flour in a large mixing bowl. Add egg mixture and stir until well mixed. Sprinkle in yeast, 1 package at a time, mixing well. Gradually add other 3 cups flour. Batter will be hard to mix with spoon. You may have to use your hand. Make sure it's mixed well. Leave batter in bowl and cover with cloth and place in warm place. Let rise 1 hour. Remove from bowl and knead in 1/2 cup flour. Knead about 10 times. Divide into 3 equal parts and place in well greased round cake pans. Cover and place in warm place and let rise about 1 hour. Bake at 350 degrees for 25 to 30 minutes. Makes 3 loaves.

Papaya Bread

3 eggs
3/4 c. oil
1 c. sugar
1 c. shredded carrots
1-1/2 c. applesauce
1-1/2 c. mashed papaya
1-1/4 c. chopped walnuts
1 tsp. salt
4 c. flour
1 T. baking soda
1 T. cinnamon
1 tsp. nutmeg

Preheat oven to 325º. Lightly grease or apply cooking spray to 2 loaf pans.

Combine eggs, oil and sugar. Mix on low speed for approximately 30 seconds.

Add carrots, applesauce, mashed papaya and nuts. Mix on low speed for approximately 30 seconds.

Combine salt, flour, baking soda, cinnamon and nutmeg. Add to wet mixture and mix by hand until combined. Spoon batter into loaf pans. Bake for 55-60 minutes.

Let rest in pan for approximately 10 minutes. Remove from pan and cool on wire rack.
